Tasting notes
A deep, ruby coloured red wine full of ripe blackberry and cherry fruit on the nose with a subtle hint of lightly toasted oak from the American Barrel ageing. English red berry fruit character dominate on the palate, (damson, cherry, with a hint of blackberry and raspberry) and on the finish subtle vanilla oak character adds a degree of complexity to this cool-climate red wine.
WINEMAKING DETAILS: 30% of grapes given cold maceration on skins at 0°c for 2 nights. Remainder fermented on skins at 30 degrees C for 4 days in stainless steel tanks, Yeast 71B. Punched-down during fermentation twice daily. Gentle pneumatic pressing at half way point of fermentation. Put through MLF. 7.5% of wine aged for 6 months in 1 year old French oak barrels. DE Filter, sheet filter and membrane 0.45m.
