An orangy pink traditional sparkling wine made from 100% Pinot Noir. Aged on the lees for two and a half years, this wine has the complexity of the classic style balanced with  fresh strawberry and cream on the finish.

Tasting notes

This Pinot Noir Rose is a traditional bottle fermented English sparkling wine. The hints of soft summer fruits on the palate are complemented by classic biscuit and brioche character typical of extended bottle maturation on the lees. This sparkling is everything you would expect of any superior sparkling wine; fresh, rich, rounded and full of complexity.WINEMAKING DETAILS: Gentle pneumatic whole bunch pressing, yeast EC1118 bayanus, fermented at 16°c in stainless steel tanks. Bentonite fining. No MLF. DE Filter, sheet filter and membrane 0.45m before bottling. Dosage at 6 gpl.ta, lees aging for 5 years.

The Harvest

The Vineyard is south facing on sandy loam soil. GDC trellis system with 800 vines per acre or 2000 per hectare. Most vines are 10-20 years old, all grapes are hand-picked. The 2019 harvest produced an above average crop with good ripeness levels and most importantly a good level of crisp acidity. The wine required minimum intervention in the winery and produced a wine of typical varietal character.

At Three Choirs we don’t like telling you what to drink and eat as it’s such a personal thing and our tastes are all different. We could say that Bacchus goes very well with asparagus but if you don’t like asparagus you may feel you won’t like Bacchus which would be a great shame! To help get over this problem we have introduced new menus in our brasserie with lots of different flavours, so you can try for yourself and decide what you like, you are in control!
